To the mill processing olives it is strictly carried out according to the parameters of the cold pressing (at temperatures not exceeding 27 ° c).
The oil "ALBA" comes from olives picked predominantly green, defined "albae" by the ancient Romans. The olives once collected, are delivered to the mill in special perforated boxes to be pressed within a few hours to mantain the optimal quality of the oil.
Picking predominantly green olives is a choice that garantees higher quality oil, even though as producers we yeild 30% less oil than producers who use mature olives.
QUALITY COMES BEFORE QUANTITY
The ALBA oil is distinguished by a very high content in polyphenols, powerful antioxidants, which in addition to their health benefits ensure high product preservation.
The result is a very valuable oil, that stands out for its intensity, freshness and strong fruity aroma.We are sure to give a product of great food and sensory value, not at all comparable with what usually is found on the market.
THE TWO VARIETIES
Our oils even when used in small doses, are rich in essences distinguishable to their unique varieties of olives. They give great pleasure to the palate, especially when used raw on warm bread, salads, pasta dishes, soups with vegetables and legumes, red and white meat and fish.
- "Alba" monotype cultivar Canino is a 100% Caninese oil (the most prized) , It stands out for its intensely "green fruity aroma” and a pleasant presence of spicy and amaroidal, with a light scent of grass.
